Mix the Westco Sup-R-Roll Yeast Raised Donut Mix according to the instructions on the bag for a small batch. Use your scale to weigh all ingredients, including the water. Use your thermometer to determine the correct temperature water. Let the dough rest for 30 to 60 minutes.

Prepare some mixed berries filling by mixing together equal parts of Westco Flavorful Strawberry Filling, Westco Northwest Marion Blackberry Filling and Westco Gourmet Raspberry Filling.

Bundle the dough. Let it rest an additional 15 minutes. Roll out and cut.

Proof in a medium dry proof box between 90°F and 100°F. Fry at 375°F for 55-60 seconds per side in BakeSense Palm Fry Shortening.

After the donuts have cooled, fill them in with the mixed berries filling (see above). Pipe BakeSense Whipped Topping on top. Garnish with fresh strawberries, raspberries and blackberries. Dust with Westco Coating Sugar.
