Mix Sup-R-Roll Yeast Donut Mix according to the directions on the bag for a small batch. Use your scale to weigh all the ingredients, including the water. Use your thermometer to determine the proper water temperature to achieve a finished dough temperature of 80°F. Let the dough rest for 45 minutes.
PROOF AND FRY
Proof in a medium dry proof box between 90°F and 100°F.
Fry at 375°F for 55-60 seconds per side in BakeSense Palm Fry Shortening. Drain the donuts for 45-60 seconds. Let them completely cool down.
Heat some Westco Vanilla Dipping Icing to 100-105°F. Split icing into 4 equal parts. Tint two of the parts using red or pink gel food colors to make light pink and hot pink dipping icing. Tint the 4th part with purple gel food color to male lavender dipping icing.
After the donuts have cooled, dip a third of them in the White Westco Vanilla Dipping Icing heated to 100-105°F. Repeat with the light pink icing and the hot pink icing for the other two thirds.
Before the icing sets sprinkle half of the donuts with your Sprinkle Mix (see above). Pipe some stripes of pink or purple icing on the top of the remaining donuts
