Mix the batter following the directions provided on the bag of Westco Red Velvet Cake Mix for a small batch. Add, and mix in, 1 Lb 13 oz of Lady Ellen All Purpose Flour during stage 3 of the instructions.

Using a #20 Ice Cream Scoop, or a decorating bag, deposit 2 oz. batter on a paper lined sheet pan leaving enough room for the pies to expand (you should fit about 12 pies per full sheet pan).

Bake at 325-360°F for 10-15 minutes. Let the pies completely cool down.

After the pies have cooled turn half of them over. Using a piping bag, with a star tip, cover them with Westco Cream Cheese Icing. Top the filled pies with the remainder of the pie tops.
