Bakesense palm fry shortening (#17231 1/50 lb)
Westco vanilla dipping icing (#19529 1/45 lb)
Sprinkelina green sprinkles (#92280 1/6 lb)
Sprinkelina purple sprinkles (#92462 1/6 lb)
Sprinkelina yellow sprinkles (#92281 1/6 lb)

Alternate Products Used

Westco royal cake donut mix (#50265 1/50 lb)
Bakesense IE donut fry shortening (#17240 1/50 lb)

Directions

MIX

Batter: Scale and mix some Westco Richblend Cake Donut Mix according to the instructions on the bag for a small batch.

*Use your scale to weight all the ingredients, including the water. Use your thermometer to determine the proper water temperature to achieve a dough temperature of 72°F.


Let the batter rest for 15 minutes.


Sprinkle Mix: Combine equal parts Sprinkelina Green Sprinkles, Sprinkelina Purple Sprinkles and Sprinkelina Yellow Sprinkles. Set aside.

FRY

Fry at 375°F for 55-60 seconds per side in BakeSense Palm Fry Shortening. Drain the donuts for 60 seconds. Let the donuts completely cool down.

FINISH

Using purple gel food color tint some Westco Vanilla Dipping Icing heated to 100-105°F to your desired purple hue.

After the donuts have completely cooled down, dip them in purple dipping icing. Before the icing sets garnish half of each donuts with the Mardi Gras Sprinkle Mix (see above).
