Remove dough from cooler and let it sit until it reaches room temperature.
Roll dough approx. 3/8” thick. Using a 4” heart shaped cookie cutter cut dough into heart shaped pieces. Place 1 ½ oz. Westco Gold Seal Strawberry Filling in the center of half of the heart pieces.
Carefully roll out each unfilled heart piece slightly wider (approx.1/4”) than the filled heart pieces. Using a heart shaped fondant cutter cut out a small heart shaped whole in the center of each unfilled pie dough piece.
Spray the edges of the filled heart pieces lightly with water. Place one unfilled heart piece on the top of each filled heart piece and seal the edges.
Wash the pies with egg wash. Garnish half with Sprinkle Mix (see recipe above) and half with crystal sugar.
Bake pies at 375-400°F depending on your oven type for approx. 15-20 minutes or until the pies are a rich golden brown color.
Using red gel coloring tint some Westco Vanilla Dipping Icing heated to 100-105°F red. Place red dipping icing in a pastry bag. Place plain (white) Westco Vanilla Dipping Icing heated to 105°F in a separate pastry bag. Once the pies are cooled, drizzle stripes of red or white Westco Vanilla Dipping Icing on top of the sugared heart pies.
